How do I include information on contact or media sheet printouts?

Both the Contact and Media sheet print out dialogs include the option to 'Print View Fields'. When this is selected the Contact and Media sheets will include the fields shown in the Thumbnails and Media views respectively. By default this will be the filename, but other fields can be shown in either view by changing the View Options (available in the Windows menu).
